GARLIC BACON BROCCOLI SKILLET RECIPE

Ingredients

4 tablespoons unsalted butter or ghee

1 tablespoon olive oil

½ onion chopped

2 heads broccoli cut into florets

½ pound crispy bacon
-
¼ cup shredded cheddar cheese (special occasion ingredient) use sparingly

2 tablespoons beef or chicken broth
-
1 teaspoon fresh thyme leaves chopped
-
2 tablespoons fresh parsley chopped
-
4 cloves garlic minced

salt and pepper to taste
Instructions

To make the Garlic Bacon Broccoli Skillet: Put broccoli florets into a food processor and pulse two or three times until you get coarse broccoli rice

Heat the butter and oil in a large pan or skillet over medium-high heat. Sauté the onion until softened (about 3 minutes).

Add the riced broccoli and cook for about 2-3 minutes stirring from time to time. Once broccoli is crisp-tender, add cheddar and bacon to the skillet. Cook until the mixture golden and slightly caramelized – about 8-10 minutes.

Pour in the vegetable stock and cook for 2 minutes, to reduce the sauce slightly. Add more stock to deglaze if necessary.

Add thyme, 1 tablespoon of parsley, and garlic. Cook the broccoli, bacon, and cheddar for half a minute, until fragrant. Season generously with salt and pepper, to taste, sprinkle with remaining parsley, and serve the Garlic Bacon Broccoli Skillet immediately. Enjoy!
