EGG ROLL IN A BOWL RECIPE

Ingredients

  • 2 tablespoons coconut or avocado oil

  • 1 pound ground turkey, beef or pork

  • 1 ½ cup sweet onion

  • ½ teaspoon minced ginger

  • 3 cloves garlic, or 1 ½ teaspoons minced garlic

  • ¼ cup chicken broth

  • 5 cups sliced/chopped green cabbage

  • 2 tablespoons coconut aminos or Tamari

  • 2 teaspoons apple cider vinegar

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 1 teaspoon toasted sesame oil

  • diced green onions to garnish

Instructions

  1. In a large saute pan, over medium heat, drizzle one tablespoon of oil and add ground turkey.

  2. Cut onions and cabbage into thin slices.

  3. Push the meat to the side of the pan and add onion. Saute for 3-4 minutes. Add garlic and ginger. Saute for another 2 minutes. Stir together.

  4. Pour chicken broth in the pan and scrape the bottom to deglaze it. Add cabbage, coconut aminos, and vinegar.

  5. Stir well and cover with lid. Reduce heat to medium-low and cook for 12-15 minutes or until cabbage is tender.

  6. Just before serving, add sesame oil and top with green onions. Enjoy!
