BUTTER CHICKEN RECIPE

Ingredients

  • 1 pound chicken breast

  • 1 cup heavy whipping cream

  • 2 tablespoons butter

  • 1 ½ tablespoons tomato paste

  • 2 cloves garlic

  • ¼ onion about ½ cup chopped onion

  • 1 ½ teaspoon turmeric powder

  • 1 tablespoon ginger, fresh or powdered

  • 1 teaspoon salt

  • ¾ teaspoon chili powder

  • ½ teaspoon ground cinnamon

Instructions

  1. Cut chicken into bite sized chunks & coat with turmeric, ginger, salt, chili powder & cinnamon. Set aside.

  2. Heat a skillet to medium heat & add butter. As butter melts, dice onion & garlic & add it to pan. Cook for 2-3 minutes until onions are translucent.

  3. Increase pan heat to med-high & add chicken. Cook to just almost entirely through – just the outside should be white. (3-5 min). Add heavy cream & tomato paste. Stir immediately & adjust heat to med-low. Cover & cook for 5-7 minutes.

  4. Remove lid and gently stir. If you like a thicker curry sauce, allow it to reduce with the lid off. Serve over cauliflower rice & enjoy!
