BUTTER CHICKEN RECIPE

Ingredients

1 pound chicken breast

1 cup heavy whipping cream
-
2 tablespoons butter
-
1 ½ tablespoons tomato paste
-
2 cloves garlic
-
¼ onion about ½ cup chopped onion

1 ½ teaspoon turmeric powder
-
1 tablespoon ginger, fresh or powdered
-
1 teaspoon salt
-
¾ teaspoon chili powder
-
½ teaspoon ground cinnamon
Instructions

Cut chicken into bite sized chunks & coat with turmeric, ginger, salt, chili powder & cinnamon. Set aside.

Heat a skillet to medium heat & add butter. As butter melts, dice onion & garlic & add it to pan. Cook for 2-3 minutes until onions are translucent.

Increase pan heat to med-high & add chicken. Cook to just almost entirely through – just the outside should be white. (3-5 min). Add heavy cream & tomato paste. Stir immediately & adjust heat to med-low. Cover & cook for 5-7 minutes.

Remove lid and gently stir. If you like a thicker curry sauce, allow it to reduce with the lid off. Serve over cauliflower rice & enjoy!
