PUMPKIN SPICED CHICKEN RECIPE

Ingredients

6 chicken thighs with skin, rinsed and dried (can use other cuts but the dark meat, thighs and legs, will absorb the flavor most thoroughly)

2 teaspoons kosher salt or sea salt

1 teaspoon ground black pepper

3 tablespoons ground pumpkin spice mix

¼ cup avocado oil Primal Kitchen avocado oil is a good choice

1 whole onion sliced small to medium sized onion
-
½ cup black pitted olives
-
â…“ cup cherry tomatoes

3 slices uncured, nitrate-free bacon or turkey bacon raw, no sugar

1 cup chicken stock or water
Instructions

Preheat the oven to 300 ℉.

In a large mixing bowl, toss together chicken, salt, pepper, pumpkin spice and avocado oil. NOTE: For a more intense spice flavor, prep this part and allow it to rest in the fridge for a few hours or overnight before cooking.

Arrange onions, olives and tomatoes, and bacon on the bottom of a 9" x 13" baking dish. Place chicken on top, skin side up.

Pour chicken broth over the top of the entire dish.

Place in the oven and slow roast for 2 hours. Serve and enjoy!
**Serve with cauliflower rice, mashed cauliflower or zucchini noodles.
