TOFU SCRAMBLE RECIPE

Ingredients

  • 2 ounces firm tofu

  • 1 tablespoon minced garlic

  • 1-2 tablespoons coconut oil

  • 2 handfuls spinach

  • 5 Cremini mushrooms

  • ½ onions OR

  • 1 leek

  • 1/4 teaspoon salt

  • 1/4 teaspoon turmeric powder

  • 1/8 teaspoon ground black pepper

Instructions

  1. In a food processor place all the ingredients, except coconut oil, and pulse until it looks like scrambled eggs.

  2. In a non-stick pan put in your coconut oil and the tofu mixture.

  3. Sauté for 5-10 minutes stirring often.

  4. Season to taste and enjoy!
