TOFU SCRAMBLE RECIPE

Ingredients

2 ounces firm tofu
-
1 tablespoon minced garlic
-
1-2 tablespoons coconut oil
-
2 handfuls spinach
-
5 Cremini mushrooms
-
½ onions OR
-
1 leek
-
1/4 teaspoon salt
-
1/4 teaspoon turmeric powder
-
1/8 teaspoon ground black pepper
Instructions
-
In a food processor place all the ingredients, except coconut oil, and pulse until it looks like scrambled eggs.

In a non-stick pan put in your coconut oil and the tofu mixture.

Sauté for 5-10 minutes stirring often.

Season to taste and enjoy!
