Ingredients

8 eggs

3 cups fresh spinach
-
¼ cup chopped onion
-
¼ cup shredded cheese *limited special occasion ingredient only

chopped green chile optional
-
salt & pepper to taste

garlic powder to taste
PICK A PROTEIN - choose one -
8 ounces chorizo
-
8 ounces bacon
-
8 ounces sausage
-
8 ounces ham
-
8 ounces steak
CHOOSE YOUR VEGGIES - 2 cups, mix & matched -
bell pepper
-
mushrooms
-
broccoli
-
kale
-
red onion
-
zucchini
-
brussels sprouts
Instructions

Preheat oven to 400℉. Fully cook protein & set aside. In the same skillet, add chopped veggies, spinach & onion. Sauté over medium heat until veggies are tender, about 5 minutes.

Remove veggies from heat and layer the bottom of a greased 8×9 inch cake pan or pie dish.

In a medium sized bowl, whisk together eggs, chili & seasoning.

Pour egg mixture evenly over top of veggies. Sprinkle cooked meat & cheese evenly over top of egg mixture. Bake for 15-20 minutes until firm. Allow to rest for 5 minutes. Enjoy!
