Ingredients

  • 8 eggs

  • 3 cups fresh spinach

  • ¼ cup chopped onion

  • ¼ cup shredded cheese *limited special occasion ingredient only

  • chopped green chile optional

  • salt & pepper to taste

  • garlic powder to taste

    PICK A PROTEIN - choose one

  • 8 ounces chorizo

  • 8 ounces bacon

  • 8 ounces sausage

  • 8 ounces ham

  • 8 ounces steak

    CHOOSE YOUR VEGGIES - 2 cups, mix & matched

  • bell pepper

  • mushrooms

  • broccoli

  • kale

  • red onion

  • zucchini

  • brussels sprouts

Instructions

  1. Preheat oven to 400℉. Fully cook protein & set aside. In the same skillet, add chopped veggies, spinach & onion. Sauté over medium heat until veggies are tender, about 5 minutes.

  2. Remove veggies from heat and layer the bottom of a greased 8×9 inch cake pan or pie dish.

  3. In a medium sized bowl, whisk together eggs, chili & seasoning.

  4. Pour egg mixture evenly over top of veggies. Sprinkle cooked meat & cheese evenly over top of egg mixture. Bake for 15-20 minutes until firm. Allow to rest for 5 minutes. Enjoy!
