Ingredients
Salad

5 hard boiled eggs, chopped

20 cherry tomatoes, quartered

3oz mozzarella pearl (use shredded or chopped)

3oz fresh basil, finely chopped

3 tablespoons olive oil

sea salt & pepper to taste
Garnish

3 tablespoons balsamic glaze
Instructions

Gently fold all the “Salad” ingredients in a mixing bowl, continually mixing so that the yolks help create a sauce.

Season to taste with sea salt and pepper.

Garnish with balsamic glaze, or keep it separate if making it for others who may not prefer balsamic vinegar.

Store in an airtight container for 3 – 5 days in the fridge.
