Ingredients
Veggie Mix

spray avocado oil or olive oil

3 bell peppers, sliced​

1 medium white or yellow onion, sliced

pinch of sea salt & pepper
Fish
-
spray oil
-
1.5 lb halibut (or white fish)
-
1 tablespoon Smoky Sriracha
-
1 tablespoon citrus pepper
-
1 lemon or lime
-
pinch of salt
Yogurt Sauce
-
7oz 2% Greek yogurt
-
6 tablespoons red enchilada sauce (mild or hot)

8 low carb wheat tortillas
Garnish (optional)
-
pickled cabbage
-
cilantro
Instructions

Lightly spray the fish filets with oil and add the seasoning. Rub all over the fish and set aside.

Set a nonstick skillet on medium-high heat and spray it with oil. Once hot, add the veggies and cook for 5 – 7 minutes or until the edges are seared and the onions are brown and semi-translucent. Remove the veggies from the skillet, but keep the skillet on the heat.

Add the fish fillets to the skillet and cook on both sides until cooked through and the outside edges are seared. When the filets are nearly finished, squeeze fresh lemon or lime juice over them. Remove from the skillet and set aside.

Before serving, flake the fish with a fork to distribute it for the fajitas and your meal prep evenly.

Assemble the fajitas: tortilla, fajita veggies, flaked fish, pickled cabbage (optional), and enchilada yogurt sauce. Garnish and enjoy!
